Tom galis

EXPERIENCE CURATOR

Tom Galis, is an artist of social gatherings, able    to    craft unique experiences out every small particle and molecule of an interaction. When it comes to the experience itself, his is a kaleidoscopic view. That view allows him to align small beautiful objects in such an angle that create an exquisite pattern.

The execution is a synergy of pieces, inspirations and experiences. His mastery of the craft has been formed after years in the fast casual business alongside with radio station stints and DJing gigs. His view is singular; to challenge the way Greek food is perceived, marrying modern thinking with good old traditional hospitality.

ANASTASIOS GLIATIS

DIRECTOR OF AESTHETICS

Anastasios creates focal points to Greece translating American angles. These focal points create an aura that brings you to Greece without a plane ticket. His finishing touches light the way and the individual components that please the eye and stimulate the spirit.

His creations carry invariably their individual aura. At the Greek this memory is one of where he grew up, his home in southern Greece where stone is prominent and alongside with wood it creates a welcoming environment where conviviality can flourish and grow. If home is where the heart is then Anastasio's interpretation of everybody's home has created a very special place in our hearts.

CHIEF PRAGMATIST

George is the prince of hospitality. He was born into the hospitality industry, was formed into a prudent overseer and advanced a diversity of establishments into prosperous times; all with the wisdom of generations' worth of experience in making people feel comfortable.


"A restaurant without margin is a hobby and a hobby is not a business," is his motto and restaurants are not his hobby - even though he makes look like it, because of his welcoming nobility. His philosophy applies to a comfortable sense of urgency that flows into the space, becomes energy and results in the genuine pleasure of receiving an unsullied experience. 

Dimitrios manousakis

CHIEF CONCOCTER

Dimitrios aspires to be the modern Deipnosofistis of Greek food; to define and record the totality of contemporary Greek gastronomy. He draws inspiration from classical literature, epic tales and folklore traditions, while being a studious follower of what his five senses tell him feels right.


Coming from a traveler and a cook, his place at every table was the one of the entertainer. With an everlasting passion for gastronomy and the world of wine and spirits, he has seasoned in Athenian wine bars, tsipouradika in Volos, bistros in Bordeaux, diners in Los Angeles, and comfort joints in Richmond, only to find himself in NYC dives. His aim is to present and isolate uniquely Greek wines, spirits and concoctions to an audience that awaits to be tended to a distinct experience.

In the globalized world that we are living in, with influx of information and the ability to copy things instantaneously, authenticity is becoming a highly sought-after quality and very difficult to find.


For us, authenticity lies in the soul and the heart that pervades Greek food. Authenticity is not a fried piece of cheese that is part of the continuous copying and pasting of every other Mediterranean restaurant. Authenticity lies at the recipes that our mothers and grandmothers have entrusted us with to provide. Authenticity lives at our Greek wine-only list.


At the end of the day, what makes Greek food great is not any singular item, but a whole philosophy and point of view of how to encircle any piece of food with great hospitality and a level of ambiance that transports you back to Greece.
