This season, we pay homage to our heritage, the Sarakatsani nomadic mountain tribe of northern Greece.

Our ancestors from the Sarakatsani tribe lived a communal and nomadic lifestyle, moving around looking for pasture, living in dome shaped huts that can be erected quickly. Thats why they shared a communal oven and fire pit where they cooked the meals for their family and neighbors.

Our menu features a range of meats, vegetables and fish that is wrapped in parchment and baked for hours in our deck oven for that fall off the bone tenderness.

Tom is an artist of social gatherings, able to craft unique experiences out every small particle and molecule of an interaction. When it comes to the experience itself, his is a kaleidoscopic view. That view allows him to align small beautiful objects in such an angle that create an exquisite pattern.

The execution is a synergy of pieces, inspirations and experiences. His mastery of the craft has been formed after years in the fast casual business alongside radio station stints and DJing gigs. His view is singular; to challenge the way Greek food is perceived, marrying modern thinking with good old traditional hospitality.
